Ride ’em Cowboy: Preparing a Cowboy Steak

One of the new signature entrees for The Dining Room is called a cowboy steak. It’s a cut of prime rib beef about three inches thick totaling 36 to 40 ounces. We serve it with crisp kale and a pat of roasted garlic butter. Like the butter, the steak is so tender that it melts in your mouth.
Wait a minute, you say: «Who’s going to consume 40 ounces of steak in one sitting?» Certainly, a tired cowboy just off the trail might be expected to do so. But our suggestion is that you share this plate with one or more members of your party.
If you do, I recommend ordering one or more sides. Our new menu features Pan-Roasted Root Vegetables, Garlic Spinach, Cauliflower Gratin, Loaded Baker’s Potato, Mac ‘n Cheese, Foraged Mushroom Sautee, Parmesan Fries and Mashed Potatoes.
Just make sure to leave room for dessert. We’re betting you’ll succumb to our Chocolate Bar, PB & J Eclair, Cookie Jar, Citrus Crostata, Praline Cheesecake or Too Tall Carrot Cake.
