Ukoy, Okay or deep-fried fritters is one of the most common street food here in the Philippines. Basically, it uses squash & papaya, however, since I already have that version, I used this time potato & carrot which it turned really good. It is perfect for a snack or you can have it with freshly steamed rice and a spiced vinegar dipping sauce.
INGREDIENTS:
1 pc or 200g Potato
1 pc or 200g Carrot
1 medium-sized Red onion
1/2 cup chopped celery leaves
3 tbsp Cornstarch
Batter (pls see below)
1/4 kg of shrimps for toppings
Batter ingredients:
1/2 cup of Cornstarch
1/2 tsp of Pepper
1/2 tsp Baking powder
1/2 tsp Atsuete powder
1 & 1/2 tbsp Fish sauce
1 pc Egg
1 to 2 tbsp of water
