INGREDIENTS :
aaloo (potatoes) 1 kg
hari pyaz (green onion) 1 cup chopped
hara dhaniya (coriander) 1/2 cup chopped
podina (mint) 1/2 cup chopped
hari mirchien (green chilies) 1 to 2 tbsp chopped
lemu ka ras (lemon juice) 1 tbsp
namak (salt) 1/2 tbsp
lal mirch pwd (red chili pwd) 1/2 tbsp or to taste
lal cutti mirch (crushed chili flakes ) 1/2 tbsp
bhuna zeera pwd (roasted cumin pwd) 1/2 tbsp
garam masala pwd (whole spice pwd ) 1 tsp
khatai pwd (raw mango pwd) 2 tsp full
adne(eggs) 2
bread cumbs fine quality (bareek) 4 to 6 tbsp (jitna zarorat ho)
first boil potatoes with 1/2 to 1 tsp salt.
boil 4 to 5 hours before making.
drain and keep them in fridge for 4 to 5 hours.
then tear mint and coriander leaves and wash them with lots of water.
drain and put in a sieve
after 15,20 minutes chop them finely with green onion and green chilies.
take out chilled potatoes and remove skin.
grate with a grater and add all spices and chopped greens.
mix well
then add bread crumbs as much required in your mixture.
make small kababs in any shape you like.
keep them in the freezer for 15 to 20 minutes.
then pre heat oil in a frying pan and add 3 to 4 at a time.
oil should be perfectly hot and flame should be medium high.
fry 1 to 2 minutes from both sides.
if you use less bread crumbs coat them in egg .then fry
TIPS :
if you are a vegetarian use 2 tbsp plain flour and 1/2 cup water mixture instead of eggs.
for kids lunch don`t add chilies .use only black pepper pwd.
dip in eggs then coat bread crumbs for potato cutlets.
serve with ketchep. chili garlic sauce or chatni.
don` freeze for long.use them in 1 to 2 days and store in fridge not freezer.
