2 types of bread being prepared and sold by these ladies in Tehran.
Both bread originate from the ancient Kurdistan region in middle east, which is a common mountain range with population of 36 million; divided by 4 countries: Iran, Turkey, Iraq and Syria.
The golden round puffy bread is called «Barsagh» which is wheat bread dough mix with Persian spices, fried in oil (ghee was used instead of oil in the ancient times)
The Folded bread is a flat naan baked on cast Iron plate over charcoal, garnished with spring onions. This type of bread is one of the oldest recopies of bread with a history of 4000 years and has been an essential part of Kurdestani people’s diet for centuries.
This is not a common street Food Sight! Most of the time this bread is being prepared by the woman of the house to feed the family members. In this video for the first time on youtube, you can see these women taking their cooking art to the streets of Tehran, Iran. ps. Hijab is mandatory in the streets of Iran, normally Kurdish women don’t wear hijab.
These bread are usually eaten with toppings like: cream cheese, walnuts, honey, jam or butter.
